I recently bought new wire rigging for my plastic boat, and forgot about the "stop ball" needed on the underside of the spreader. Would it be completely silly to use a stainless wire-rope clamp? ...

I meant 5/16th. I recently replaced my uppers (survey found a cracked swage) and the rigger suggested using SAE turnbuckles with 5/16 wire (and a special order metric toggle for the chainplate).
