Match the overall lengths exactly with the turnbuckles set where they were when the rig was tuned.

Measure the overall length of each cable - from the pin at the mast to the pin on the chainplate. Make the new rigging this length, but set the new turnbuckles 1/3 closed. This will give you a kit that looks to be made by a professional when re-installed.

For your purposes , 1by19 stainless rigging cable has no meaningful stretch or elongation, don't even waste your time trying to figure it out.
