Served shrouds are great, but I've only seen served headstays used with wooden hanks, and even then, the service was well-tarred to the point of being smooth and shiny. Bronze hanks will eat through service. Quality bare galvi wire, a little oiled, will wear eventually, but not badly; at the price it's no stress to replace it before the damage gets worrying, and even at that you ought to get several seasons.
The obvious compromize is served galvi shrouds and stainless headstays...
