Default Serving galvanized wire

I plan to put a gaff-headed rig on the Cape George 31' cutter I'm finishing, and am weighing the pros and cons of galvanized halyards. If I use galvanized for the forestay and jibstay, should I serve them for their entire length? Will the sail hanks chafe the service off in no time? If unserved (or is it unserviced?) will the bronze hanks chafe the galvanization off?
Before anyone suggests a roller furler, I must add that that is NOT an option--I hate furlers.
